Sourcing the best seafood from around the globe: Firda Fjord Trout
Buena Vista Seafood sources product from best-in-class fisheries and farms around the globe.
Buena Vista Seafood brings premium seafood items to the North American market. Our seafood comes from the extreme north, like the Canadian Nunavut, all the way to the tropics such as Mauritius located east of Madagascar in the Indian Ocean.
Norway is home to several of our top producers.
From the king crab fishing grounds and the wolffish farm located north of the Arctic Circle to the halibut, fjord trout, salmon and cod down the western coast.
Our premium fjord trout comes from a family owned and operated farm located in Byrknesøy, Norway.
As you can see, there is not much around. It's a remote community reliant on fish and fish farming.
Firda has a motto, "keeping lights in the windows" which essentially comes down to keeping this remote community alive.
The Firda fjord trout farm is family owned and operated, allowing them to make generational decisions instead of only meeting quarterly revenue goals dictated by investors who do not live in the community.
The farm has a state-of-the-art processing plant which is located on the fjord.
Every day, rain or shine, the trucks must pass across several country bridges and roads, many of which are actually only one lane.
In this area, right of size definitely comes before right of way.
The trout pens are located in the deep fjords, accessible only by boat.
Each pen site is tended to by a specific site manager. Each manager cares for their fish from the time they arrive as juveniles through to harvest.
Firda is a vertically integrated company. This means they control the entire rearing process from hatchery to harvest.
They even produce an expertly cured roe.
The trout egg is smaller than salmon eggs but it has a vibrant color and great texture.
It is a very approachable roe perfect for brunches and breakfasts...
...or on crisps for a more casual serving option.
Firda only farms fjord trout.
Their fish are well adapted to the local environment. They thrive here without the use of antibiotics, chemicals or other medicinals.
The muscle structure of the fjord trout is slightly different than that of salmon. The muscle fibers are shorter and the fat tends to be more localized. Also, the color, which comes from an all natural source, is consistently very bright.
This fjord trout is an excellent choice for all sashimi and crudo preparations. It is also a superlative roasting, smoking, curing or grilling fish.
The processing plant is modern, efficient and meets stringent EU hygiene norms.
This plant allows Firda to offer both dressed fish as well as a filet program.
The warehouse is equipped with ergonomic equipment to facilitate ease of packing. All the workers are extensively trained in proper work safety and sanitation procedures.
Firda is proud to meet the strict ASC (Aquaculture Stewardship Council) and Global G.A.P. certifications.
Skjerjehamn is a local hospitality and camp site that has been fully restored by the family that owns and operates Firda.
They re-established this historic venue as a way of celebrating the region while creating employment for partners and families of the farm workers.
The site consists of an historic hotel (circa 1890's), a restaurant and cafe, shops, fjord rafting tours, a fishing museum, guided nature walks and...
...they even started a summer music festival which attracts over 1,000 attendees every summer. Most of the attendees come and stay on boats or camp for the entire week.
All this structure has created local employment for the farm worker's families. It is a holistic approach to keeping this fishing community alive, or "keeping lights on in the windows".
Firda's Norwegian fjord trout is an easy choice. It is reliable, consistently meeting the highest quality and taste standards as well as having a long shelf-life.
Chefs and retailers alike can offer Firda fjord trout to their customers with full confidence.
We are very proud of this fish and fully support this Firda fjord trout program.
