A century egg is a preserved egg that results in a gooey, jelly-like snack. Although it’s called a “century egg” or “millennium egg” or “100-year egg”, the preservation process only takes a few weeks or months.

4. Eggs Benedict, USA
The eggs Benedict consists of a toasted English Muffin, ham or bacon, poached eggs, and hollandaise— all eaten open-faced! According to legend, a hungover Wall Street Broker named Lemuel Benedict is the creator of this masterpiece.

5. Frittata, Italy
A frittata is a slowly cooked mixture of eggs, cheese, vegetables, and prosciutto. It’s placed under a grill or broiler until the top is set. It’s common for Italians to use up leftovers in frittatas!

6. Kuku, Iran
Kuku is a pan-fried mixture of eggs, herbs, and sometimes potatoes. Other variations of kuku include eggplants and caviar!

7. Tortilla de Patatas, Spain
Tortilla de patatas is made by poaching thinly sliced potatoes and onions in olive oil then combining with beaten eggs and cooking stovetop. One of the largest tortillas ever made used 1852 pounds of eggs and weighed in at 3500 pounds.

8. Shakshouka, Tunisia
Shakshouka is a spicy sauce made of tomatoes, peppers, spices, and onions, with eggs poached in the sauce. It’s commonly served with bread and feta. There are other variations from Palestine, Israel, Egypt, and more.

The torta is an omelet filled with ground meat and vegetables, often eggplant and potatoes. It’s typically saved over rice or with banana ketchup. In the Philippines, torta is also a kind of small, spongy cake.

10. Huevos Rancheros, Mexico
Huevos rancheros consists of tortillas topped with eggs, beans, sometimes meat, and is covered in a tomato-chili sauce or other toppings like salsa, cheese, lettuce, and sour cream. As the name suggests, this dish originated among ranchers or farmers.

The scotch egg is a hard or soft-boiled egg encased in sausage meat, coated in breadcrumbs, and deep-fried. It’s often paired with pickles. Originally, eggs were covered in a fish paste instead of sausage meat. It was a snack meant for upper class people on the go.

Gyeran mari is a rolled omelet made of beaten eggs and many diced fillings. It’s also known as a Korean egg roll!

Arroz con huevo is simply rice topped with a fried egg. It was formerly known as “comida de pobre”, or “poor people food”, but it’s eaten by anyone and everyone nowadays.

Menemen is a cooked mixture of eggs, vegetables, cheese, and sausage, often served with bread. It was named after the Menemen district in Turkey!

15. Mish-Mash, Bulgaria
Mish-mash, like it sounds, is a scrambled mixture of eggs and vegetables. It’s served with Bulgarian white cheese, or Sirene, which a is pickled/brined cheese.

16. Omeletta, Greece
The omeletta is a folded omelet of eggs, potatoes, and vegetables. It’s usually served with sausage, lemon, and feta. Even though it sounds like “omelet”, this dish is more similar to a frittata.

17. Arepas de Huevo, Colombia
Arepas de huevo are arepas (cornmeal dough) filled with eggs then deep-fried. In Luruaco, a Colombian municipality, there’s an entire festival dedicated to the arepa de huevo!

18. Khao Khai Chiao, Thailand
Khao khai chiao, or khai jiao is made of eggs, fish sauce, lemon juice or vinegar, soy sauce, and cornstarch or flour, cooked in vegetable oil until brown. It’s flipped, not folded, then served with rice, chili sauce, and/or cucumbers. It results in a super puffy, light, and crispy omelet!

Æggekage is a thick folded omelet of eggs, milk, and flour, topped with chives, bacon, tomatoes, and chives. Æggekage is also a sweet oven pancake!

Kerak telor is an omelet made of eggs, glutinous rice, and chicken. It’s garnished with fried coconut, shrimp, and fried shallots. It is a very common street food, especially during the Jakarta Fair.
